It means that she paid for the show (whatever show that may be) and Burnside paid for the gambling at the race track?
Burnside will stay with her no matter what she'll do or what happens.

Burnside sang "Goin' to Memphis, see the Worldly Fair" in "Poor Black Mattie".
So that's why I thought "fairs" was right. See the show at the "fair".

If it was referring to a fair, it would not be in the plural. He wants the other person to treat him, play the horses and then allow him to pick up the money. Sounds like a great deal--for Burnside!
