There are so many that I could list here but I'll narrow it down to three...

Charlie Patton
Washington Phillips
Blind Willie Johnson

Perhaps Washington Phillips doesn't count if we are talking strictly "blues" here but I would love to see and hear him play live.

Tarter and Gay. Those two sides seem like a small glimpse of what they were capable of.

Patton, for his style and showmanship, love his stuff.
Lemon, because I think he's amazingly great, how did he do it?
Tommy Johnson, because I love his music, also said to be quite a showman.

William Brown of "Mississippi Blues" fame, recorded by Lomax @ Sadie Beck's in the early forties. That recording is the most perfect "country blues" I know - a tall gent who played left-handed, according to Alan. It don't get much better than that, folks!
After that, McTell - he was something wonderful, from all reports. Could distinguish between light and dark, but still an amazing person... and musician.

1) Any configuration of the Patton/House/Brown/whoever "party band" of the 1920s... (Son's first session of LoC recordings with Leroy Williams, Fiddlin' Joe Martin, Willie Brown to me are still some of the best recordings around)
2) An afternoon with Lead Belly (for his sheer power and variety of songs)
3) Robert Johnson (cause... Robert Johnson, man)

Washington Phillips as his vocals and zither have haunted me for many years.
That's all she wrote Mabel!

Garfield Akers, alone or with Joe Calicott. Either way.
