Had the turkey in the smoker at dawn to the sound of the first few cedar waxwings arriving for the winter keening from the top of the liquidambar in full fall color over the deck. Much to be thankful for here in Oakland. Truly my favorite holiday.

May everyone be surrounded by close friends and family.

And a belated Happy Thanksgiving to y'all...

That's funny, I also smoked a turkey the day before TG. I used apple wood chips on a standard Weber 22" charcoal grill. The other one we had we slow-roasted in the wood range on the day. It went in at midnight just as the smoked bird came off the grill. The smoked one was on for 12 hours, the roaster took 14 hours. Both were better than I've managed to achieve in the past with turkeys. Low and slow for me from now on. We had eight people joining us for dinner.

We raised the turkeys from week old poults. I despatched them, Cheryl & I plucked them and hung them guts-in in the root cellar to age for a week before cleaning and brining. It was pretty intense at the outset but we hung in there and did-in four in total. But that's just how it goes down on the farm, hope my karma can stand it. We still have 12 crazy turkeys running around the barn, and a foot of snow on the ground.
